He is responsible for 12 of the group\u2019s ever-busy kitchens, overseeing more than 100 chefs in Adelaide and Melbourne.\u00a0<\/p><p style=\"text-align: center;\">We caught up with him in the group\u2019s flagship venue, the historic The Gully Public House &amp; Garden in the foothills of the Adelaide Hills. We have more than 100 chefs working with us. Since I took over four years ago only four members of staff have moved on. Training is a cost to business. Staff have never been more important than now. Every part of the process is laid out in numbered steps. Every ingredient is weighed to the gram. Even liquids. We do not reduce wet dishes by volume, instead the chefs place the pot on the scale. We measure the reductions of stocks and other dishes by weight. They are all winners.<\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-303fbbf elementor-widget elementor-widget-text-editor\" data-id=\"303fbbf\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>We developed that new menu during COVID lockdown last year. We were shut doing takeaway \u2013 really, only in reality, to keep our staff on. Something essential to us. I believe that with thought and skill you can make any dish a\u00a0winner for both the customer and the business, even comfort\u00a0food. My wife and I were walking the streets letterboxing the\u00a0menu. But better. Much better. For\u00a0the roast pork we took pork Scotch fillet and cooked it sous vide with some\u00a0 seasoned apple at a low temperature for 14 hours. For service, it is trimmed, char-grilled and finished in the oven to order. It works for us as the pork costs less\u00a0than a third of beef fillet. We get another dish by taking the\u00a0off-cuts, tossing them in flour and deep-frying them until\u00a0crisp and serving them in a sweet Thai sauce with a Thai\u00a0salad. Other times of the year we use the pork trim to make\u00a0a ragu with red wine and serve with hand rolled gnocchi.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-87c6467 elementor-section-content-middle elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"87c6467\" data-element_type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-no\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element elementor-element-5b185d0\" data-id=\"5b185d0\" data-element_type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-582e868 elementor-widget elementor-widget-heading\" data-id=\"582e868\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h2 class=\"elementor-heading-title elementor-size-small\">How does a chef learn all these skills? <\/h2>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-cdc65b7 elementor-widget elementor-widget-text-editor\" data-id=\"cdc65b7\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>I started in a hotel restaurant in Adelaide, The Sebel, with a strong focus on fine dining. The training was excellent. Our work was recognised in the Nestl\u00e9 Golden Chef\u2019s Hat Awards several times. I moved on with the restaurant owners to Windy Point, one of Adelaide\u2019s well-known approachable fine dining restaurants with a glass canopy and a view of the city and the stars.
