Spray silicon mini muffin\nmoulds lightly with neutral oil. Sift together flour, 20g\ncocoa powder, baking powder and set aside. Melt 100g\ndark chocolate and add 125g chopped butter, cover and\nsit for a couple of minutes until the butter has melted. Stir to combine. Roughly puree the beetroot and stir through\nchocolate mixture until well combined. In a small bowl,\nwhisk the egg yolks and add to the chocolate mixture,\nstirring until well combined. Whisk the egg whites until soft peaks form, then gradually add 100g caster sugar and the brown sugar one spoonful at a time, whisking in between until you have a thick and glossy meringue. Fold one third of the meringue through the chocolate and beetroot mixture, then half of the flour. Alternate with the remaining meringue and flour, until just combined. Spoon into your prepared cake moulds. Bake until the cake springs back to the touch. About 15-20 minutes. Cool for 10 minutes, then unmould and cool completely on wire racks. Once cooled, trim the tops of the cakes.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-7eb776cf elementor-widget elementor-widget-heading\" data-id=\"7eb776cf\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">2. Bring the prosecco, 20ml\nwater, and 65g caster sugar to the boil, add the hibiscus\nand steep for 5 minutes. Strain and add the gelatine, stir through until completely combined. Pour into small dome\nmoulds (compatible to the size of your cake inserts)\nand freeze.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4be9fd38 elementor-widget elementor-widget-heading\" data-id=\"4be9fd38\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">3. Heat 100ml cream and chilli powder until it just\ncomes to the boil. Pour over chocolate, cover and sit for 5\nminutes, until the chocolate has melted. Stir well and set\naside to cool and thicken. \t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-428e243 elementor-widget elementor-widget-heading\" data-id=\"428e243\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">4. Crunch<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-bff4c16 elementor-widget elementor-widget-text-editor\" data-id=\"bff4c16\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\tIn a large bowl toss together the buckwheat, puffed rice,\n60g sugar, cardamom, pink peppercorns, fennel, remaining\ncocoa powder and 80g of melted butter until well coated.\nSpread onto two baking sheets and bake at 130\u02daC for\n15-20 minutes until crisp. Cool. Melt the remaining 100g\nchocolate, add the cooled crunch and toss to coat, spread\nonto a baking sheet lined with baking paper. Set aside to\nharden. Cut small discs, the same size as your beetroot\ncakes. To assemble the inserts, start with a spiced crunch\nround, spread with ganache, top with a cake round, a little\nmore ganache and a jelly disc. Freeze until needed.\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b5c70c3 elementor-widget elementor-widget-heading\" data-id=\"b5c70c3\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">5. Whisk 250ml of\nthe cream into soft peaks and set aside. Beat the cream\ncheese and remaining 150g sugar together until smooth,\nset aside. Warm the remaining 50ml of cream and add\nbloomed gelatine, add the vanilla and mix through the\ncream cheese mixture. Gently fold in the whipped cream. \t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-cf94b4e elementor-widget elementor-widget-heading\" data-id=\"cf94b4e\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">6. Check the temperature, when it is\n45\u02daC stir through the powdered colour, strain through a fine\nsieve. Pour into spray gun, spray cakes individually, straight\nfrom the freezer.
