mince<\/li>\n<li>200g green prawn meat, minced<\/li>\n<li>2 cloves garlic, finely chopped<\/li>\n<li>1\/2 red onion, finely chopped<\/li>\n<li>1 long red chilli, finely chopped<\/li>\n<li>6 shiitake mushrooms, finely chopped<\/li>\n<li>1\/2 cup coriander stems and roots, washed, dried and finely chopped<\/li>\n<li>20ml fish sauce<\/li>\n<li>10ml soy sauce<\/li>\n<li>20ml peanut oil<\/li>\n<\/ul>\n<p><strong><br>Hot and sour dressing<\/strong><\/p>\n<ul>\n<li>100ml fish sauce<\/li>\n<li>50ml lime juice<\/li>\n<li>20ml peanut oil<\/li>\n<li>30ml sherry vinegar<\/li>\n<li>30g palm sugar, grated<\/li>\n<li>10g caster sugar<\/li>\n<li>15g ginger, grated or finely chopped<\/li>\n<li>1 long red chilli, finely chopped<\/li>\n<li>2 stems coriander, roots, stalks and leaves, finely chopped<\/li>\n<li>1 red eschallot, finely chopped<\/li>\n<li>1 clove garlic, finely chopped<\/li>\n<\/ul>\n<p><strong><br>Noodle salad<\/strong><\/p>\n<ul>\n<li>250g thin squid ink spaghetti (or bean thread vermicelli\/sweet potato noodles)<\/li>\n<li>1\/3 wombok, finely shredded<\/li>\n<li>100g daikon, julienned<\/li>\n<li>1 medium carrot, julienned<\/li>\n<li>Handful mint leaves, To prepare the squid<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-17218f9 elementor-widget elementor-widget-text-editor\" data-id=\"17218f9\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>In a bowl using your hands, mix the pork, prawn mince, garlic, onion, chilli, shiitake mushrooms, coriander, fish sauce and soy until well combined. Using a spoon (a wide tube funnel makes the job even easier), stuff the squid tubes until comfortably filled (they should round out slightly but don\u2019t overstuff as the mixture will expand a little as it cooks) and secure the end shut using a toothpick. Place in a single layer on a tray, cover and refrigerate until required.\u00a0<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-63efc98c elementor-widget elementor-widget-heading\" data-id=\"63efc98c\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">2. Set aside until required. For the noodle salad<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-20cef162 elementor-widget elementor-widget-text-editor\" data-id=\"20cef162\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p class=\"p1\">Cook the noodles to al dente (according to their packet instructions), plunge the cooked noodles into an ice bath to cool quickly and halt cooking. Just before serving mix together the noodles, wombok, daikon, carrot and mint, and lightly dress with a little of the hot and sour dressing.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-41646c48 elementor-widget elementor-widget-heading\" data-id=\"41646c48\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">4. To cook the squid<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-2757aa2f elementor-widget elementor-widget-text-editor\" data-id=\"2757aa2f\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Heat a large frying pan, griddle or barbecue plate over medium-high heat, coat with the oil and add the stuffed squid tubes, cook for 6-8 minutes (their size will dictate the time), until golden and cooked through. Halfway through toss the tentacles on to cook.
