finely chopped<\/li><li>1 tablespoon balsamic vinegar<\/li><li>1 tablespoon chilli paste<\/li><li>1 tablespoon honey<\/li><li>1 tablespoon Dijon mustard<\/li><li>1 teaspoon smoked paprika<\/li><li>1 stems, rinsed and dried<\/li><li>2 jalape\u00f1os, stalks removed, deseeded and chopped<\/li><li>3 cloves garlic<\/li><li>3 green shallots, chopped<\/li><li>40ml lime juice<\/li><li>2 teaspoons Dijon mustard<\/li><li>2 teaspoons chilli paste<\/li><li>15ml honey<\/li><li>1 teaspoon ground cumin<\/li><li>125g goat\u2019s curd<\/li><li>Salt and freshly ground black pepper to taste<\/li><\/ul>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t<div class=\"elementor-column elementor-col-50 elementor-top-column elementor-element To marinate the chicken<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-c9b7457 elementor-widget elementor-widget-text-editor\" data-id=\"c9b7457\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>In a container large enough to hold the chicken, mix together the soy sauce, lime juice, garlic, ginger, balsamic vinegar, chilli paste, honey, Dijon, smoked paprika, chilli powder, pepper and salt.<\/p><p>Wash the chicken under cold water and pat dry with paper towel. Cut the chicken into two by removing the spine and cutting through the breastbone. Add the chicken halves to the marinade, massaging well to coat every bit of the chicken. Cover and marinate in the fridge for 2-24 hours. For best results turn the chicken halves every so often in the marinade.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-25b5e3f0 elementor-widget elementor-widget-heading\" data-id=\"25b5e3f0\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">2. To make the sauce<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4bc40311 elementor-widget elementor-widget-text-editor\" data-id=\"4bc40311\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Combine the coriander, jalape\u00f1os, garlic, shallots, lime juice, Dijon, chilli paste, honey, cumin and goat\u2019s curd in a food processor (this can also be done in a jug using an immersion blender). Blitz for a minute or so until combined into a creamy sauce. Season to taste. Cover and set aside until needed. The sauce can keep for 2-3 days in the fridge.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-6899d37d elementor-widget elementor-widget-heading\" data-id=\"6899d37d\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">3. To cook the chicken<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-120690c1 elementor-widget elementor-widget-text-editor\" data-id=\"120690c1\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p class=\"p1\">Preheat the oven to 220\u00b0C. Remove the chicken from the marinade, reserving the remaining marinade for basting, and lightly pat dry with paper towel. Set the chicken pieces skin side up on a baking tray and rub all over with the olive oil. Roast for 35-45 minutes, until the skin is burnished and crisp and the chicken is cooked through (test this by piercing the thickest part of the thigh with a skewer &#8211; the meat is done if the juices run clear) basting with the remaining marinade halfway through. Remove from the oven and cover loosely. Rest for 10 minutes.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4e1292b elementor-widget elementor-widget-heading\" data-id=\"4e1292b\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">4. To cook the cassava fries<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-57736a9e elementor-widget elementor-widget-text-editor\" data-id=\"57736a9e\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>While the chicken is resting cook the cassava fries. Heat a deep fryer (or large pot with 20cm of neutral high smoke point oil) to 180\u00b0C. Add the cassava fries straight from the freezer, frying for 3-5 minutes, until golden and crisp. Toss immediately with sea salt.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-57022b9 elementor-widget elementor-widget-heading\" data-id=\"57022b9\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">4. However, as these are hard to come by in Australia, gochujang, fermented chilli paste, sriracha and sambal work very well as substitutes.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t<\/section>\n\t\t\t\t<section class=\"elementor-section elementor-top-section
