Let them sit for a couple of minutes, then gently break them apart with a fork. Leave to soften for an additional 10 minutes. To make the sauce<\/strong><\/p>\n<p>Combine all ingredients in a small bowl and stir well. To make the noodles<\/strong><\/p><p>Heat half of the peanut oil in a frying pan over medium-high heat. Add the eggs, allow to set slightly, before breaking into pieces with a spatula. Once cooked through, remove from pan and set aside.<\/p><p>Add the prawns to the same pan and cook for 2-3 minutes, with a pinch of salt. Remove from pan and set aside.<\/p><p>Add the remainder of the oil to the pan and saut\u00e9 onions until slightly softened. Add the remaining vegetables and cook for a further 3-4 minutes. Return the prawns and egg to the pan, followed by the noodles.
