Caf\u00e9s continued to build on the success of the previous decade, constantly raising the bar to deliver more exciting, delicious dishes. Restaurants went even higher-end, with Tetsuya\u2019s, Attica, Quay and Brae all appearing on the S. And alternative milks. Soy milk had been on caf\u00e9 menus since the early 2000s. And many early adopters were already offering the more niche options, but it was around this time that the full range of alternative milks was no longer a choice \u2013 it was a necessity.\u201dBut Luke believes these shifts weren\u2019t just about what was happening in the kitchen. \u201cAs expectations on chefs began to shift and the importance of life outside the kitchen gained traction, it wasn\u2019t about the long hours anymore. Single-service businesses became a big thing. Consumers knew what they wanted, and business owners delivered. Instagram-loving Millennials were now in their 30s, earning a good wage and eager to spend it. Plant-based, carnivore, acai, poke, laminated pastries, butter boards, natural wine, low and no alcohol, compostable packaging, birria, fermenting, craft gins, live fire, zero-waste. For every trend, there was a customer.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-4ee213a elementor-widget elementor-widget-heading\" data-id=\"4ee213a\" data-element_type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">2020 - present<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-55d1158 elementor-widget elementor-widget-text-editor\" data-id=\"55d1158\" data-element_type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t<p>Something also happened around February 2020 which we all remember well, so we won\u2019t say much more than it was a tough time for hospitality. But during that period, amidst all the uncertainty and upheaval, there were also some amazing stories of resilience and adaptation.<\/p><p>\u201cThis time was unlike anything we\u2019d faced before&#8221; says Bidfood Australia CEO, Rachel Ruggiero. &#8220;All we could do was focus on being there \u2013 for our staff, for our customers and for the people they serve. It wasn\u2019t easy, but I\u2019m incredibly proud of how we as an industry stood together and came through it.\u201d<\/p><p>While the trends that will define this decade are still being written, some early contenders are already making their mark. If you look at health and aged care, for example, we\u2019re seeing restaurant-style meals, better ingredients and real menus. It\u2019s about dignity, enjoyment and proper nourishment. It\u2019s not just fuel anymore. Even in schools, kids are growing up with different expectations of food. That shift is going to shape the next 30 years.\u201d<\/p><p>Rachel Ruggiero is confident that, though, that whatever happens next, Bidfood will be ready. \u201cI don\u2019t have a crystal ball, but if the last 30 years are anything to go by, Bidfood \u2013 and by that, I mean the incredible people who show up every day to keep our customers moving \u2013 will keep evolving, adapting and leading the way in foodservice.\u201d<\/p><p>\u201cThere are people working here who have been with us since the beginning. And I know there are people working here now who will still be part of our team in 30 years.
